Organic, very low sulfite
100% Chenin blanc, planted on chalky-clay soil, facing south, the grapes packed with sunshine are hand harvested in two separate “trie” in order to get the best balance between sugar and acidity. The whole grapes are gently pressed and carefully racked, the Chenin ferments at low temperature, where it develops all the white flowers and citrus aromas. Dry on the palate, with a gentle texture and a superb expression; gains complexity as it opens in your glass, yellow fruits, quince, hint of herbs; can also be cellared for another 5 years; in the meantime you can enjoy this beauty with fish, shellfish, poultry, as an aperitif, with goat cheese…..
